Stir Fried Beef in Oyster Sauce

Ingredients:

For the marinade:

350g fillet steak (or bavette steak, if you prefer), sliced really thinly

3 tbsp oyster sauce

1/4 tsp sesame oil

1 tbsp cornstarch

For the Stir Fried Beef in Oyster Sauce:

2 tbsp oyster sauce

1 tbsp light soy sauce

1 tsp dark soy sauce

2 tbsp oyster sauce

1 tbsp Shaoxing wine

2 tsp brown sugar

1 red pepper, diced into bite sized chunks

1 small onion, also diced into bite sized chunks

4 medium sized chestnut mushrooms, quartered

1 yellow chilli, de-seeded and finely sliced

3 large spring onions, chopped into 1 1/2 inch pieces

Instructions:

  1. Add together the marinade ingredients, mix together well and leave aside for the flavours to infuse for 30 minutes.
  2. Mix together the oyster sauce, soy sauce, Shaoxing wine, dark soy sauce and brown sugar and set aside.
  3. Heat a frying pan over high heat and allow it to get smoking hot before adding in the oil and then the marinaded beef. Stir fry until 80% cooked and then remove into a bowl.
  4. Now pour a little more olive oil into the pan and add in the onions, peppers and mushrooms before pouring over the stir fry sauce. After the sauce has heated up, taste it. You may want to add in some white pepper or perhaps a little more brown sugar, depending on your preference.
  5. When the veg have started to become a little less hard, add the set aside meat back to the pan together with the spring onions and the chilli. Bubble it all together as the sauce thickens and everything becomes nice and glossy.
  6. Garnish with some more finely chopped spring onions and serve with Jasmine rice. Enjoy!
